I wait with great anticipation for July. My tomatoes from the garden are red, ripe, juicy and so very flavorful! By the time the weather gets hot enough here to be in the 70’s at night, (which is what ripens the tomatoes) I already have harvested lots of cucumbers.
This easy summer salad is one of my favorites to serve at all those summer BBQ’s. There is nothing much easier or healthier, either.
What Vinegar to Use in Cucmber Tomato Salad?
You can use a variety of vinegars for this salad. Balsamic is fantastic. Red wine vinegar, apple cider vinegar, champagne vinegar are all great too! I usually mix it up and make this Cucumber Tomato Salad with a different one each time I make it. Each vinegar adds a different depth of flavor to the salad. It is light and refreshing!

Cucumber Tomato Summer Salad
Ingredients
- 3 medium, very ripe tomatoes, sliced
- 1 large or 2 small cucumbers, sliced
- 1/4 small red onion, thinly sliced
- 1 tbsp fresh parsley, chopped
- 1 tsp chopped dill, fresh
For dressing
- 2 tbsp cider vinegar balsamic, apple cider, white wine, red wine or champagne
- 1/4 c Olive Oil
- salt and pepper to taste
Instructions
- Prepare vegetables. Add to bowl.
- Mix dressing thoroughly. Add a little at a time to vegetables and toss to coat. If you have any leftover dressing save it for your next salad.

I live in Wisconsin, so my tomatoes are only just starting to peep their little heads out. I’m making a list of all the recipes I want to use them in when they’re finally ripe, and this salad is at the top! I make a similar one with dill and red wine vinaigrette. Your variations sound delish!
