Honey Roasted Beets
Honey Roasted Beets are not only delicious, they are an easy tasty side dish for the holidays or for any day. With just four ingredients, these beets only take about 40 minutes to roast to delicious, tender perfection.

This recipe is perfect for the holidays. They roast up in no time in your oven or in the air fryer where they don’t use the short oven space available.
What you Need
- Beets: Fresh, whole beets in the late summer and fall are the most tasty ones to used. Find them at farm stands and farmer’s markets up until the new year. Beets bought at other times of the year are shipped in from other parts of the world and won’t be as tasty. Choose small to medium beets for the best flavor.
- Oil: Use good quality olive oil. Just a bit to make them crisp up.
- Maple Syrup: Use local maple syrup. It has many health benefits and is said to reduce seasonal allergies. Don’t use imitation syrup.
- Seasoning: Kosher salt and Freshly ground black pepper are a must. Additional herbs or spices could include fresh thyme, rosemary or sage.
How to Make it

Cut both ends off of the beets.
Pro Tip: Use food grade gloves to peel and chop the beets. Beet juice will stain your hands for days.

Cut the beets into similar sized chunks. Cut them into pretty small wedges.

Place the beets in a medium bowl. Season with salt and pepper. Drizzle the oil and honey into the bowl.

Mix the beets well so that all of the pieces are basted with the oil and honey.

Spread the beet pieces out on a parchment-lined baking sheet. This will save on clean up. Roast them in a preheated 400°F oven for about 30 minutes until they are tender and caramelized.
To air-fry the beets, spread out the pieces on the air fryer basket. Air fry for 6-8 minutes at 350°F. Shake the basket or flip the pieces. Air fry for another 4 minutes. Test the beets. If they are starting to soften, increase the temperature to 400°F, flip them and air fry for another 4 minutes. Test for doneness. If they aren’t quite done, air fry at 4 minute intervals until the beets are tender and the edges are caramelized.
What to do With Leftovers
Leftovers can be eaten cold or warm. Storage: Store leftovers in an airtight container for 3-4 days in the refrigerator.
Reheating: Leftovers can be reheated in the air fryer at 350°F for about 5 minutes. They can also be reheated in the oven, preheated to 350°F or in the microwave for 1-2 minutes until hot.
Freezing: Leftovers can be frozen for a couple of months to add to soups, stews or salads.

- They are delicious cold in salads. Either green salad or side salads. Top the roasted beets with feta, balsamic and arugula with an orange vinaigrette.
- Add them to smoothies.
- Layer them in wraps are sandwiches with hummus and greens.
- Mix them into scrambled eggs or frittatas.

If they are starting to soften, increase the temperature to 400°F, flip them and air fry for another 4 minutes. Test for doneness.
