What you Need

Meats

A selection of cured or deli meats adds plenty of savory options:

  • Rolling or folding slices makes the board look great. See how to fold meats and make roses in this article.
  • Thin slices of prosciutto, salami, or capicola. Corned beef is the perfect addition to this board.
  • Something different like pâté or spreadable meats for extra variety.

Cheeses

Mix and match textures and flavors for variety:

  • A flavored option like smoked gouda or spicy pepper jack for something bold.
  • Soft choices like brie, boursin, or goat cheese.
  • Use hard cheeses like gouda, cheddar, or Parmesan. We use specialty Irish cheddar like Dubliner to fit with the theme. Check out our article for suggestions on how to cut the cheeses.

Fruits

A mix of fresh and dried fruits adds sweetness and balance. For St. Patrick’s Day charcuterie, we like to stick to a primarily green theme.

  • Dried: Apricots, cherries, cranberries, or figs.
  • Fresh: Green grapes, kiwi, green apple, or pears (Brush them with lemon juice to slow browning. Add a few orange slices, raspberries, blueberries, or strawberries for a splash of color.

Veggies

Crunchy vegetables add color and texture:

  • Pickled options like olives or baby dill pickles for a briny kick.
  • Cucumber slices, celery, green beans, snap peas, green bell pepper, asparagus. Again, add a few cherry tomatoes for a pop of color.

Crackers and Bread

Something sturdy is key for pairing with cheese and dips:

  • A gluten-free option is a great addition.
  • Crackers, baguette slices, or even pretzels. An Irish soda bread would be good for the occasion.

Dips and Condiments

A few spreads and dips tie everything together:

  • Mustard or a garlic herb dip, here we added a green goddess-type dip, for an extra layer of flavor
  • Hummus, honey, or fruit preserves.

Candies and Nuts

  • Maple candy is a good seasonal item to add to the board.
  • Chocolates delight just about everyone. We chose Andes candies, chocolate/mint candy.
  • Nuts. Pistachios are an excellent choice for St. Patrick’s Day.

Beverages

Guinness beer is the perfect beverage to serve with this board.

How to Store Leftovers

Store similar items, such as meat, separately from cheese and produce, together in storage bags. Refrigerate for up to four days.

Get creative with how to use the leftovers. Vegetables can be added to stir-fries or stews, and fruit can be added to smoothies or bowls for breakfast.

The FDA recommends discarding meats and cheeses that have been sitting out for over two hours. On hot days above 90°F, anything left out for more than an hour should be discarded to avoid food safety risks.

Simple Tips for Assembly

  • Use Small Bowls: Keep dips and snacks like olives in ramekins or small bowls to keep the board neat. Place the bowls on your board first.
  • Cheese and Meat: Place the cheeses and meats around the bowls, then fill in with fruits, veggies, and crackers.
  • Add Some Color: Bright fruits and vegetables make the board look more inviting and less like a pile of snacks. Stick to a mostly green theme for this St. Patrick’s Day charcuterie board.
  • Edible flowers or shamrock plants make a fun garnish. If you have any St. Patrick’s Day-themed items, like rainbows with a pot of gold, feel free to use those, too.
  • If you like, arrange the board in a shamrock shape.
