Easy side dishes make dinner so much more enjoyable. One of my favorite parts of the fall is the fall squash. They’re flavorful, versatile, and super easy to get on the table fast.

What is Delicata Squash?

Delicata is a variety of winter or fall squash known for its tender skin. Unlike many other fall squash varieties, they have edible skin. They have yellow, green, and orange stripes on their skin and light orange flesh.

They lend themselves well to roasting, stuffing, boiling, or mashing. Roasting is my favorite way to cook them because it gives them a great caramel flavor.

What Does Delicata Squash Taste Like?

Delicata squash has a naturally sweet, nutty flavor that’s often compared to sweet potatoes or butternut squash. Roasting brings out its natural sugars and gives the edges a delicious caramelized flavor while the inside stays creamy and tender.

Because the skin becomes tender during cooking, there’s no need to peel it before roasting.

What You Need

  • Delicata squash: Delicata is one of the smaller varieties of fall squash.
  • Fat: Use olive oil or butter to help the squash caramelize.
  • Spices: Go as simple as salt and pepper, or get adventurous with thyme, parsley, oregano, rosemary, paprika, garlic powder, or sage.

Remove the stem from the squash. Use a sharp knife to cut the squash in half.

Scoop out the seeds and endocarp (the stringy stuff) with a large spoon and discard.

Cut the squash halves into 1-2-inch wide slices. Lay the squash slices on the sheet pan in a single layer. Drizzle with olive oil or melted butter.

Season with salt, pepper, and any other spices you’d like. Roast in a 350°F oven until the edges are caramelized and the meat is tender.

How to Store Leftovers

Store leftover squash in an airtight container in the fridge for 3-5 days. If the skin is removed, mash the squash meat and freeze it for use in breads and baking.

How to Use Delicata Squash

Roasted delicata squash pairs well with roasted chicken, turkey, pork chops, ham, or grilled steak. It’s also a great addition to holiday dinners alongside mashed potatoes, stuffing, cranberry sauce, and green beans.

For a lighter meal, serve it over mixed greens with toasted pecans, dried cranberries, goat cheese, and a simple vinaigrette.

Use delicata in a roasted vegetable salad with honey lemon vinaigrette for a fresh lunch or dinner idea.

Variations

  • If you like it a bit sweeter, sweeten it with honey, maple syrup, or brown sugar.
  • You can also peel the squash and roast, boil, or steam it.
  • If you like a super-easy full meal, fill the squashes with a mixture of meat, cooked rice, and vegetables to make stuffed delicata squash.
  • In the last 5 minutes of roasting, sprinkle with freshly grated parmesan cheese for a distinctly savory side.
