    How to Make Jiffy Cornbread Better

    How to make Jiffy Cornbread Better? Jiffy Cornbread is delicious. But with a couple simple additions you can make it even better.

    Homemade cornbread is not difficult to make from scratch. It is just a few pantry staples mixed together. Namely cornmeal, flour, baking soda, sugar, salt, milk or buttermilk, eggs, vegetable oil and a little salt. So why used a box of Jiffy?

    We love the convenience of Jiffy brand cornbread mix. It is so fast and easy to whip up a batch when we make chili or ribs or fish or… You will be amazed at how much tastier it can be with these couple of tips.

    This recipe will yield the most moist cornbread you have ever tried. The taste is nice and sweet without being too sweet.

    Cornbread is a staple in our house when we have chili, soups and stews. The sweetness of the bread pairs incredibly well with these savory dishes.

    What you need

    • Jiffy corn muffin mix – 2 boxes. You can use another brand, if you can’t find Jiffy but we prefer Jiffy. There are some good gluten free cornbread mixes on the market too.
    • cream style corn – make sure that the creamed corn you buy is only corn and doesn’t have any cream or milk. Adds a little extra flavor and texture and will also give it lots of moisture.
    • buttermilk – if you don’t have buttermilk on hand add 1 tablespoon of vinegar to regular milk. Let it sit for 5 minutes. You essentially have buttermilk. (whole milk is better than skimmed)
    • honey – use local honey if you can find it.
    • eggs – large eggs are best.
    • chives – optional but tasty.

    How to make it

    1. Empty Jiffy cornbread mix into large bowl.
    2. Add creamed corn.
    3. Add buttermilk, honey and eggs.
    4. Mix well.
    5. Add chives.
    6. Fold in.
    7. Spray 8″x 8″ / 20×20 cm baking dish with non stick cooking spray or grease it well with butter. Pour in batter.
    8. Preheat oven. Bake at 400°F / 200°C for 25-30 minutes until top is golden brown and toothpick or cake tester poked in middle of bread comes out clean.

    If you would like to make corn muffins just grease muffin tins and this recipe will work just as well. It will make 2 dozen muffins. You could also cook it in well greased cast iron skillet for a fun presentation.

    If bread is getting brown but the inside is still not done, tent the pan with aluminum foil.

    Variations on cornbread additions

    • Add 1/2 cup grated cheddar cheese
    • Omit chives and add other fresh herbs like parsley
    • Add finely sliced green onion tops
    • Add finely chopped jalapeño peppers
    • Try adding crispy bacon or ham
    • Finely dice roasted red pepper.

    • 3 tablespoon honey

    • 2 tablespoon chopped chives

    Instructions

    • Empty cornbread mix into large bowl.
