What are garlic scapes?
Garlic scapes are the future flower of the garlic plant along with the flowers’ stem (botanically known as the peduncle). They are curly and kind of crazy looking.
This future flower needs to be cut off of the plant so that the plant will concentrate it’s energy on growing a large bulb. If it isn’t removed, the bulb will be considerably smaller.

Where to find garlic scapes
If you don’t grow your own garlic, you can find the scapes at farmer’s market, farm stands and at specialty Asian markets in the late spring or early summer, depending on your climate..
Ingredients you need
- garlic scapes
- dijon mustard – I use honey dijon.
- honey – use fresh local honey. It is great for curbing seasonal allergies. You can substitute maple syrup to make this vegan friendly.
- white wine vinegar- or substitute red wine vinegar or white vinegar
- water
- salt and pepper
- olive oil – extra virgin olive oil or substitute any mild flavored oil instead of the EVOO.
How to make garlic scape dressing
- Wash scapes. Rough chop. Place them in your blender container with vinegar, salt and water.
- Process until the scapes are very pulverized. This can take a few minutes.
- Add honey and mustard. Blend until combined.
- Add pepper. Blend until smooth.
- Drizzle in olive oil slowly until the dressing is emulsified.
Store dressing in the refrigerator. Let it stand out for for a few minutes to come to remove temperature before using. Shake contents vigorously before serving.
Pro tips
- Make sure the garlic scapes are really pulverized or your dressing will be chunky.
- Use a mild flavored oil so that you don’t overwhelm the flavor of the garlic.
- Pour oil in slowly so that it has a chance to emulsify.
- Best if made a few hours ahead of using it so the flavors have a chance to combine.
- You can use a little more vinegar or a little less oil depending on how your family likes salad dressing.
How to use garlic scape vinaigrette
- Use it as a marinade for chicken, beef or pork chops to tenderize the meat and give it a delicious garlicky flavor.
- Use it on green lettuce salads or on dinner salads with your favorite proteins.
- Add dressing to potato salad.
- Add it to macaroni salad.
- Replace the apple cider vinegar in coleslaw for an extra garlic zing.
- Use them in stir-fries in place of minced garlic
- Serve it with grilled or roasted vegetables such as; green beans, asparagus, green onions or broccoli.
- Make a green goddess dressing by adding different herbs such as; fresh parsley, tarragon, oregano and dill. Add buttermilk, sour cream, mayonnaise or yogurt

Garlic Scape Dressing – Vinaigrette
Ingredients
- 2 garlic scapes
- ¼ cup white wine vinegar
- ¼ cup water
- 1 teaspoon salt
- 3 teaspoon Dijon mustard
- 3 teaspoon honey
- 3/4 cup oil see notes
- ½ teaspoon cracked black pepper
Instructions
- Wash and dry scapes. Chop into rough pieces. Place in food processor or blender bowl.2 garlic scapes
- Add vinegar, water and salt. Process until scapes are pulverized and very small.¼ cup white wine vinegar, ¼ cup water, 1 teaspoon salt
- Add mustard, honey and pepper.3 teaspoon Dijon mustard, 3 teaspoon honey, ½ teaspoon cracked black pepper
- Process until smooth.
- Drizzle in oil slowly. Until the dressing emulsifies. Start with 3/4 cup oil and adjust according to your tastes.3/4 cup oil
