    Shrimp & Asparagus Quiche with 4 cheeses

    shrimp and asparagus quiche is great for Mother's Day Brunch!

    Do you love quiche? Do you love shrimp? We love quiche…. and shrimp! Do you need a quick dish to put together for Mother’s Day Brunch? This Shrimp & Asparagus Quiche is loaded with four different cheeses! Such a perfect Spring treat when the asparagus is tiny and fresh! It is soooo good! It comes together in 10 minutes and then throw it in the oven!

    We are rather adore our seafood! I could totally eat seafood everyday! Shrimp is low in calories, high in protein, low in fat and carbs. It is has selenium, is high in vitamin B12 and phosphorous, and also contains choline, copper, and iodine. The only problem with them is they contain about half of the cholesterol we should eat per day. I have very low LDL (bad cholesterol) and high HDL (good cholesterol), so I don’t need to worry about that. Thanks, Mom and Dad!

    What is your favorite course to serve for Mother’s Day? I love making a brunch! I can do lots of things ahead. Just to mention a few, I love making English muffins, a few appetizers like these Cranberry Orange Meatballs, or these Pigs in a Blanket. Then something creamy and hearty, like this Lobster Mac & Cheese! Everything can be done ahead, so on Mother’s Day, I don’t have to kill myself cooking, on the day that is supposed to be about me! Just saying!! 🙂

    I don’t ever remember having quiche as a child. People ate differently in the 70’s. I remember eating meat and potato dishes often. My Mother made taco sauce, soups and stews quite a bit. We always had a side salad, every night, no matter what. Oddly enough, we did not eat quiche. I would have remembered eating this Shrimp and Asparagus Quiche, for sure!     Shrimp & Asparagus Quiche

    This Shrimp & Asparagus Quiche is so delicious! It's also perfect for Mother's Day Brunch! Put together in less than 30 minutes and then relax while the oven cooks it.

    Ingredients

    • 1 homemade or store bought pie crust
    • 4 eggs
    • 1.5 cups Milk
    • 1.5 cups mixed cheeses, grated I used gouda, mild cheddar, sharp cheddar and fresh Parmigiano reggiano
    • .25 lbs shrimp, cooked.
    • 1/2-3/4 cup asparagus, blanched and cooled
    • 2 tsp dill weed
    • 2 tsp Salt
    • 1 tsp Pepper

    Instructions

    • Preheat oven to 350°F.
    • Place crust in pie plate and crimp edges. 
    • Dice about 1/2 of the shrimp in medium sized chunks
    • Whisk the eggs in large bowl. Add rest of ingredients and mix.
    • Pour egg mixture into the prepared pie crust.
    • Bake for 45 minutes to 1 hour until only the very center of the quiche wiggles. You can also test it with a cake tester. If the tester comes out clean, it's done.
    • Let rest 5 to 10 minutes before cutting.

    Notes

    Resting step is very important! If you cut quiche before the rest, it will fall apart.
    Center should wiggle like jello, when done.
    Do not overcook or quiche will crack.
    Refrigerate leftovers promptly. Will keep for 3-4 days.
    Do not freeze
