Instant Pot Boiled Potatoes
With this incredibly easy Instant pot Boiled Potatoes recipe, you can have fork tender potatoes in a fraction of the time of boiling them on the stove. They are consistently tender and delicious.

One of my all time pet peeves is waiting for potatoes to get done when boiling them on the stove. It seems like they take forever to boil, if you are doing a lot of potatoes.
The instant pot to the rescue. When I got my ip, this was one of the first recipes I undertook.
What you need
- potatoes – you can use any potato you like. Red potatoes, white potatoes, Russet potatoes, Yukon gold, baby (any color) and butter potatoes will all work. Just be aware that different sized potatoes will take different times to cook. Try to find potatoes that are similar sized. See details in recipe below.
- salt– optional, but recommended for baby potatoes. For medium and large potatoes they are not covered with water so the salt will not penetrate them.

How to make them
- As previously stated, pick potatoes that are fairly uniform sizes. Wash potatoes. Place trivet in liner of pot. For baby potatoes you can eliminate the trivet. Add potatoes. If you would like to peel the potatoes, feel free to do that first.
- Add one cup of water to liner.
- Large and medium sized potatoes can be pierced with a fork to release steam during the cooking process.
- Close lid and turn vent to sealing position.
Set cooker on manual mode, high pressure. Cook potatoes 5-12 minutes, depending on size. Use a natural pressure release for 10 minutes. Then vent remaining pressure and carefully remove lid away from your face. If you are in hurry, add one minute to the cooking time and use a quick release.
Timing for various sized potatoes
- Extra large potatoes- 12 minutes
- Large- 10 minutes
- Medium- 7 minutes
- Baby potatoes- 5 minutes
Note: potatoes can also be cut into 1-inch pieces and made in the pressure cooker. If they are cut they will only take about 3 minutes.

How to use these potatoes
- Fried in butter or oil to make hash browns or home fries with onion and served with your favorite eggs.
- Serve with meal as a side dish with butter, sour cream, chives, parsley or your favorite toppings.
- Use them for loaded potatoes.
- potato salad
- For mashed potatoes, add 2 minutes to the cooking time.
- Use them in soups or stews
Suggested cooking times will produce a fork tender potato that is firm enough to dice or slice.

How to store leftovers
These potatoes are great for easy meal prep. Make a big batch to use later in the week.
Store potatoes in a covered container, in the fridge for about 3 days. Potatoes can also be placed in freezer bags and frozen for up to 3 months.
