Honey-Roasted Almonds

These honey-roasted almonds only take a few minutes to prepare, and they are a great snack, a holiday gift, or a hostess gift. They are nutritious, better for you than store-bought, and perfect for road trips.

What You Need

  • Almonds: You can use most of the almonds you have on hand, either raw or blanched. Use slivered or whole almonds. Avoid using roasted almonds, as they may dry out due to their previous roasting. You can use the same recipe for any nuts youโ€™d like.
  • Honey: Use local honey. It is said to be good for people with seasonal allergies and has other benefits.
  • Sugar: Raw sugar, granulated sugar or coarse sanding sugar will all work.
  • Salt: Just a bit of fine table salt, sea salt or kosher salt.
  • Butter: Use butter or a mild oil. Butter gives the nuts a great flavor.
  • Water: Which is just used to thin the honey and butter.

How to Make Them

Line a rimmed baking sheet with parchment paper to prevent the almonds from sticking. Set aside.

In a large saucepan, over medium heat, melt the butter in the water and honey. Bring it to a boil.

Add the nuts to the liquid ingredients after they boil, and stir continuously until the water is absorbed.

Spread the nuts out on the parchment-covered sheet, in a single layer. Bake at 325ยฐF for about 12-15 minutes, or until some of them start to become lightly browned and toasted.

While the nuts are roasting, add the sugar and spices to a large bowl. Once the nuts are done, immediately add them to the spices in the bowl and toss to coat all the nuts with the sugar and spices.

Variations

Vanilla: Vanilla adds a delicious flavor to the nuts. Try vanilla and cayenne, itโ€™s delicious.

Spices: Feel free to use any spices you prefer on these nuts. Here are some suggestions.

Sweet & Warm

  • Cinnamon
  • Nutmeg
  • Ginger
  • Clove (a pinch goes a long way)

Spicy

  • Cayenne
  • Smoked paprika
  • Chili powder
  • Black pepper (surprisingly good with honey!)

Savory & Earthy

  • Rosemary (dried or finely chopped fresh)
  • Thyme
  • Cumin
  • Coriander
  • Garam masala (adds a little of everything)

Unexpected but Amazing

  • Chinese five-spice
  • Zaโ€™atar
  • Curry powder
  • Everything bagel seasoning (sweet-savory crunch)

Mix and match between categories, such as cinnamon with chili powder or cayenne pepper.

How to Store the Nuts

Store the nuts in an airtight container, such as a mason jar, when they are cooled. These nuts will generally last a month or more when stored at room temperature.
