What You Need

  • Bagels: Use your favorite kind of bagels. Plain, sesame seed, poppy seed or everything bagels.
  • Meat: Breakfast sausage, crispy bacon, ham or Canadian bacon are all delicious.
  • Eggs: Scrambled eggs hold their shape and stack easily.
  • Seasoning: Salt and pepper to taste.
  • Cheese: Cheddar cheese, American slices, Swiss cheese or your favorite alternative.

How to Make Them

  • Cook the sausage or bacon. We use air fryer bacon or air fryer breakfast sausage for a quick finish. Top the sausage with cheese. Let it melt in the air fryer for about a minute.
  • Whisk the eggs in a small bowl. Add about a tablespoon of cold water, plus salt and pepper. Whisk them together again. Loosely cover the bowl with plastic wrap, so steam can escape. Microwave for 30 seconds, stir, then repeat at 30-second intervals until the eggs are almost set.
  • Let them sit for 30 seconds to one minute. They’ll finish cooking while they rest. Remove them from the microwave. For a bacon sandwich, melt a slice of cheese on top of the eggs.
  • Toast the bagel while the eggs cook.
  • Add the sausage or bacon to the bottom half of the bagel, then top with the eggs and the top half of the bagel. Serve.
