Cook the sausage or bacon. We use air fryer breakfast sausage or air fryer bacon for a quick finish. Top the sausage with cheese. Let it melt in the air fryer for about a minute.
Whisk the eggs in a small, round microwave-safe bowl. Add about a tablespoon of cold water, salt and pepper. Whisk them together again. Loosely cover the bowl with plastic wrap, so steam can escape. Microwave for 30 seconds, stir, then repeat at 30-second intervals until the eggs are almost set.
Let them sit for 30 seconds to one minute. They’ll finish cooking while they rest. Remove them from the microwave. For a bacon sandwich, melt a slice of cheese on top of the eggs.
Toast the bagel while the eggs cook.
Add the sausage or bacon to the bottom half of each bagel, then top with the eggs. Serve.
