Grilled Brie Appetizer & Balsamic Strawberries
This Grilled Brie Appetizer with Balsamic Strawberries is the perfect, ridiculously easy appetizer for your next cook-out. Sweet from the strawberries, a bit of tart from the balsamic and the brie is so creamy.

It seems like it takes forever for strawberries to ripen in upstate NY! When they finally do, I try to do everything I can with them.
This Grilled Brie Appetizer with Balsamic Strawberries is my new favorite appetizer for Summer parties and picnics. It’s so easy and takes a mere twenty minutes to come together.
Everyone who has tried it loves it. It’s the perfect grilled appetizer for Father’s Day or Memorial Day.
This recipe can be made any time of the year. Use seasonal fruit like raspberries, cherries, or pineapple. Heat the brie in the oven or in a grill pan on the stovetop in the winter rather than on the grill.
What you Need
- Balsamic Vinegar: You could use champagne vinegar, but balsamic is cheap, easy and readily available.
- Brown Sugar: Or substitute honey or maple syrup.
- Strawberries: Fresh June strawberries will give the best flavor.
- Pecans: You can substitute walnuts or slivered almonds.
- Basil: Fresh torn basil.
- Brie: Use medium brie. Don’t buy a soft, aged brie.
- Bread: Toast baguette slices or serve the brie on sturdy crackers.
How to Make Grilled Brie

Mix brown sugar with balsamic vinegar in a small saucepan.

Bring it to a boil, then reduce heat and simmer until thickened about 20 minutes. It should coat the back of a spoon. (Can be made ahead and refrigerated until needed. Warm it up before serving.)

Next, toast the pecans in a dry cast iron or stainless pan, turning often until fragrant. Don’t use non-stick because you will use a dry pan, which ruins the non-stick pans.

Dice strawberries rather finely, then add toasted pecans to a medium bowl.

Add two tablespoons of the balsamic glaze to the strawberries. Mix it up. Lastly, add the chopped basil leaves.

Place the wheel of brie on a piece of parchment paper set on top of aluminum foil. Make sure the parchment is smaller than the foil because it will burn.
Grill over medium heat on the side of the grill which isn’t lit. (Indirect grill) Depending on your grill and the heat, it will take 10-15 minutes.
Top the brie with the berries and drizzle with a bit more balsamic. Serve with a toasted baguette (I toast the baguette on the grill for a smoky flavor) or a cracker of your choice.

How to Store Leftovers
Store leftover strawberries and brie in separate airtight containers. Store it in the fridge, and it’s best if used within three days. Do not freeze leftovers.
If you have leftovers, turn them into a grilled cheese sandwich the next day. It’s so delicious.

- 1 wheel of brie (mine was 17.6 oz.)
- serve with toasted baguette or crackers
Instructions

- Toast pecans in dry cast or stainless pan on both sides. Rough chop toasted pecans.1/3 cup pecans, rough chopped
- Mix strawberries, pecans and 2 tablespoons of the balsamic glaze. Add basil just before serving.2 cups diced strawberries, 2 tbsp fresh basil, chopped
- Place brie wheel on a sheet of parchment paper that is resting on a piece of aluminum foil.1 wheel of brie (mine was 17.6 oz.)
- Bake for 15 minutes or so, until, when cheese is poked, you can feel the inside is thoroughly melted.
- Top with strawberries and drizzle with additional balsamic glaze. Serve with toasted baguette slices or sturdy crackers.serve with toasted baguette or crackers
