Strawberry juice is a refreshing, delicious way to start the day! It’s full of antioxidants and vitamin C this juice has so many uses too. The flavor is like biting into a fresh strawberry in the spring.

Ball jar with handle filling with sparkling strawberry juice garnished with strawberry and straw.

This recipe for strawberry juice is totally customizable too! Like it sweeter? Just add more sugar. Like a tart, refreshing drink? Add more lemon.

With only 3 ingredients you can make a variety of drinks and more.

This recipe is a classic that our grandmother’s used to make. A great way to use up a lot of berries while they are fresh.

Best ways to store fresh strawberries

Fresh strawberries have a very short shelf life. Learning how to store them properly will save you a lot of money and wasted food. Through a lot of research and trial and error, we have found 2 ways that are pretty good at storing strawberries.

The first is to make a solution of one part white vinegar to three parts cold water. Make sure you sort through the berries first. Any that are already showing signs of going bad should be discarded. Dunk the berries for a few seconds. Drain well. Then the berries need to be dried. We found this post on Food52 blog and it worked really well.

Two quarts of fresh strawberries in antique baskets.

Line a salad spinner with a few layers of paper towel and spin the berries lightly. Then store berries in a container lined with fresh paper towel with the lid on but not totally sealed.

The second is to sort through your quart of berries and discard any that are bad. Gently place berries back in the quart container that they came in. Do not wash the berries first! Store refrigerated up to a week. If in the meantime you see any berries that show signs of mold or dark spots, remove them from the quart box.

    What you need

    • strawberries – the fresher the better. You can also use your own fresh frozen berries.
    • sugar – substitute raw sugar, brown sugar artificial sweetener or honey, if you’d like. Adjust sweetness to your taste.
    • lemon juice – fresh or bottled may be used.
Ingredients for strawberry sauce. Strawberries, lemon juice, sugar.

    How to make it

    1. Wash berries well.
    2. Remove hulls.
    3. Add berries to blender container or your favorite juicer.
    4. Add lemon juice and sugar (adjust the amount of sugar to your taste).
    5. Blend for a few minutes until all of the berries are puréed.
    6. If desired, strain juice through a fine mesh strainer or cheesecloth. Press juice through with spoon to get as much of the pulp back that you can.

    Tips for the best juice

    • Use fresh berries. The fresher the better. See section above for the best way to store strawberries. You can also use fresh frozen berries.
    • Sweeter berries will make a sweeter juice. Taste test the juice and add more lemon or sugar to taste.
    • You can substitute lime juice for the lemon juice for a slightly different twist.
    • You can use other fruits and vegetables to change it up as well. Try raspberries, blueberries, blackberries, apple, carrot, celery, cucumber. The possibilities are endless.
    • Also try different herbs and spices. Fresh ginger, mint, lemon balm,

    How to store juice

Juice is best fresh but it can be stored. Juice must be stored refrigerated. It will last about a week. For longer storage, you can certainly freeze it in bags or containers.

    • Make a refreshing strawberry drink. Just add water, club soda or seltzer.
    • Use it for strawberry daiquiris or margaritas.
