This recipe is a classic that our grandmothers used to make. A great way to use up a lot of berries while they are fresh.
How to Store Fresh Strawberries
Fresh strawberries have a very short shelf life. Learning how to store them properly will save you a lot of money and wasted food. Through a lot of research and trial and error, we have found 2 methods that work pretty well for storing strawberries.
The first is to make a solution of one part white vinegar to three parts cold water. Make sure you sort through the berries first. Any that are already showing signs of going bad should be discarded. Dunk the berries for a few seconds. Drain well. Then the berries need to be dried. We found this post on Food52 blog and it worked really well.

Line a salad spinner with a few layers of paper towel and spin the berries lightly. Then store the berries in a container lined with fresh paper towel, with the lid on but not fully sealed.
The second is to sort through your quart of berries and discard any that are bad. Gently place berries back in the quart container that they came in. Do not wash the berries first! Store refrigerated up to a week. If, in the meantime, you see any berries showing signs of mold or dark spots, remove them from the quart box.

- Sugar – substitute raw sugar, brown sugar, artificial sweetener, or honey, if you’d like. Adjust sweetness to your taste.
- Lemon juice – fresh or bottled may be used.

How to Make Strawberry Juice

Wash berries well.

Remove hulls.

Add berries to blender container or your favorite juicer.

Add lemon juice and sugar (adjust the amount of sugar to your taste).

Blend for a few minutes until all of the berries are puréed.

If desired, strain juice through a fine mesh strainer or cheesecloth. Press juice through with a spoon to get as much of the pulp back as you can.

- Sweeter berries will make a sweeter juice. Taste test the juice and add more lemon or sugar to taste.
- You can substitute lime juice for the lemon juice for a slightly different twist.
- You can use other fruits and vegetables to change it up as well. Try raspberries, blueberries, blackberries, apple, carrot, celery, cucumber. The possibilities are endless.
