What You Need

  • Rice Krispies Cereal: Use the original flavor with no sugar.
  • Marshmallows: Mini marshmallows melt faster, but standard-size marshmallows will melt as well.
  • Butter: Unsalted butter is the best choice.
  • Peppermint Extract: Use it sparingly. It can overwhelm the senses if used too much.
  • Candy Canes: Crush them in a plastic bag. The pieces shouldn’t be too large, or they will be hard to eat.
  • Chocolate: For an optional drizzle, use melted chocolate chips or baker’s chocolate.

How to Make Them

Crush the marshmallows in a plastic bag with a meat mallet or hammer.

Add the butter and marshmallows to a large saucepan over low heat. Stir until melted and creamy. Once the marshmallows start to melt, you can remove the pot from the burner.

Add the Rice Krispies and half of the candy cane pieces and mix together. Quickly add the mixture to a lightly greased 8×8″ pan and press down to fill the corners. Let them cool for about an hour and then cut them into squares.

Tips for Best Results

Use a light hand with the peppermint extract so it does not overpower everything.
Press the mixture gently into the pan so the treats stay soft instead of dense.
Add the extra candy cane pieces on top right away so they stick before the mixture sets.

Ingredients

  • 3-4 candy canes
  • 3 tablespoons butter
  • cups mini marshmallows.
  • 6 cups Rice Krispies Cereal

Optional Chocolate Drizzle

  • ½ cup Baker's Chocolate, semisweet
  • ¼ cup Butter

Instructions

  • Crush the candy canes in a bag with a hammer or meat mallet. Leave a few chunks slightly larger.
  • Melt the butter in a large saucepan.
  • Add the marshmallows. Stir until the marshmallows are melted.
  • Remove the pan from the heat. Quickly stir in the cereal and the crushed candy canes, reserving a few for sprinkling on the top.
  • Lightly press them into a 9×13-inch baking pan. Sprinkle the reserved candy canes on the top and lightly press them down. Let them cool on the counter for about an hour before slicing.
