Cottage Cheese Toast is a delicious breakfast, lunch or snack. It takes less than ten minutes to assemble and is totally customizable.

For once, I was ahead of my time. I’ve been eating cottage cheese toast for breakfast since high school. It’s delicious, versatile, filling, and never gets boring, since numerous topping possibilities exist.

Although it has been around for decades, it is gaining popularity thanks to social media like Instagram and TikTok.

Why should you make it?

  • It is incredibly easy and only takes 5 minutes to assemble a delicious breakfast, lunch or snack.
  • It is high protein and fiber. Choose a high-quality multi-grain bread to boost the fiber even more.
  • It’s low calorie. There are only about 150 calories in a serving.
  • It’s economical. It costs less than two dollars for two servings.
  • The flavor just can’t be beat and it’s very filling.

What you need

  • Good quality bread: Choose your favorite bread: wheat, rye, whole grain, or brioche. You could even choose a specialty bread like gluten-free or Wasa toast. Don’t use a cheap, soft bread. You need a sturdy bread because the cottage cheese is wet. Choose a gluten-free bread if you’re intolerant.
  • Cottage Cheese: Choose your favorite cottage cheese—you can even make your own. Use lactaid cottage cheese if you are dairy-intolerant. It’s one of our favorites. For a lighter, fluffier texture, add cottage cheese to your food processor and whip it for a minute. Whipped cottage cheese is also good for those who don’t enjoy the texture of cottage cheese, it almost tastes like ricotta and has the same texture.
  • Toppings: See the suggested toppings below, but your imagination is the only limit to what toppings you can use.

Suggested Topping Combinations

Sweet

  • Apple or pear with cinnamon or honey.
  • Sliced bananas with a sprinkle of cinnamon and honey.
  • Mixed berries like, raspberries, blueberries, or strawberries, with lemon zest.
  • Peach with a drizzle of honey or maple syrup and fresh basil leaves.
  • Your favorite jam or jelly. We particularly like apricot or blackberry jam.

Savory

  • Avocado toast sprinkled with hot crushed pepper flakes.
  • Smoked salmon or lox with sliced red onion, fresh dill leaves and cucumber slices.
  • Margaretta style: Sliced tomatoes and cucumbers with a balsamic drizzle, a sprinkle of sea salt and freshly cracked black pepper. Top it with fresh basil leaves.
  • Eggs: Make your favorite eggs, hard-boiled, fried, or poached. Hard-boiled eggs are especially good with a sprinkle of sea salt and freshly ground black pepper. If the fried egg yolks are runny, they will be messy, so eat them with a fork and knife.
  • You can even include leftover meat like chicken, pork or turkey. Deli meats would be good, too.

How to Make it

  1. Toast the bread in a toaster, toaster oven, air fryer, or oven to your liking.
  2. Top the toast with about ¼ cup of cottage cheese and spread it out. For Whipped cottage cheese, add the it to a small food processor. Process it until it is smooth and creamy.
  3. Top with your preferred toppings. Be sure to add some extra fruit and vegetables on your plate.

You don’t have to put the toppings on the toast and cottage cheese. Just add them to the plate and eat them on the side. Then, you’ll get more fruit or vegetables and nutrition.

What to do With Leftovers

Just make enough for the meal you are serving. Do not make extras because they will not store or freeze well. The bread will get soggy.

Ingredients

  • 2 slices bread
  • ½ cup cottage cheese
  • ½ cup fresh berries
  • teaspoon finely grated lemon zest

Instructions

  • Toast the bread in your toaster, oven, air fryer or toaster oven.
    2 slices bread
  • Spread half the cottage cheese on each slice of bread.
    ½ cup cottage cheese
  • Top with the berries and lemon zest. Enjoy.
    ½ cup fresh berries, ⅛ teaspoon finely grated lemon zest

Notes

Nutrition is based on mixed berries and lemon zest as the topping. Other toppings will have different nutritional values.
Instead of using the cottage cheese right out the tub, you can whip it in the food processor for a lighter, fluffier texture.
You can heat the cottage cheese toast up in the air fryer at 400°F for about 8 minutes. Just heat until the cheese starts to brown and the bottom of the toast is browned.
