Grilled Bacon Wrapped Scallops
Grilled Bacon Wrapped Scallops can be made any time of the year in the oven, or make them on the grill! Grilling them alongside some grilled veges is an easy, complete meal with no cleanup!!

I have never served Bacon Wrapped Scallops to anyone, who didn’t like them! Even my father, sho says he hates scallops had to admit they were awesome! It’s all about how you cook them! You must not overcook scallops or they get tough and rubbery!

In the summer season, we grill 9 out 10 nights. I mean seriously, why not? The flavor can’t be beat, there is no heating up the house with the stove or oven, and perhaps, my favorite, there is no cleanup! These bacon wrapped scallops take only 20 minutes total. Most of that time is getting the bacon crispy!
Important cooking tips for bacon wrapped scallops
- Bacon must be par cooked before scallops are wrapped to ensure crispy bacon.
- The larger the scallops, the easier it is not to overccok them.
- Do not overcook scallops. Cook until scallops are just opaque. Internal temperature should be 130°F
- Use high heat to quickly sear scallops.
- Coat with some fat, such as olive oil, prior to grilling.

Are bacon wrapped scallops good reheated?
It is best to just cook enough scallops to serve them right off of the grill. If you have leftovers, refrigerate, after scallops have cooled. I never warm mine up. They are sure to get rubbery and tough. Eat them cold on top of a nice bed of greens, for lunch or dinner the next day. Discard after 2 days, if not eaten.
How to make them
- Prepare vegetables on skewers. Sprinkle with pepper. Spray with olive oil.
- Place bacon slices on piece of aluminum foil. Grill until soft and just beginning to brown. Grill vegetables that take longer to cook through.
- Wrap bacon around thawed scallops. Spray scallops with olive oil. Place on very hot grill. Brown first side. Flip and brown second side until scallops are opaque and measure 130°F on an instant thermometer.

Can You freeze them?
Bacon wrapped scallops could be assembled, when the scallops are frozen. Then to cook, just thaw and cook according to directions. The one drawback is that you sacrifice the crispiness of the bacon, so I suggest assembling fresh and cooking right away.

We like to add different fruits and vegetables to individual skewers, because they will all take different times to cook. Some of the larger, more dense veges, like canned potatoes or zucchini, will take considerably longer than smalller veges, such as peppers.

Bacon Wrapped Scallops
Ingredients
- 1 lb scallops jumbos
- 12 slices bacon thin sliced
- cooking spray
- assorted, in season vegetables or fruits
Instructions
- Place vegetables on skewers. One type of vegetable per skewer.
- Spray with olive oil cooking spray and sprinkle with pepper.
- Place bacon slices on piece of aluminum foil on hot grill.
- Add skewers of vegetables that will take longer to cook. Such as, potatoes, squash, larger fruits.
- Cook bacon until soft. Flip to other side and cook just until starting to brown.
- Add other vegetables and grill until charred and cooked to your liking.
- Allow bacon to cool for a few minutes and wrap 1/2 slice of bacon around each scallop. (see notes)
- Secure bacon with skewer. Spray scallops with cooking spray. Grill over very high heat, until browned on first side. Flip skewer and brown on second side. Do not cook scallops over 130°F.
- Serve scallops with grilled vegetables.
