What You Need

  • Garlic bulbs: Use either whole garlic heads or break the cloves off and roast just the cloves.
  • Olive Oil: Use a good quality olive oil and be generous with it.
  • Seasonings: Kosher or sea salt and freshly ground black pepper.

Cut the tops off whole heads of garlic to expose the cloves. Drizzle generously with olive oil. Sprinkle with salt and pepper. To add flavor, add a few sprigs of fresh herbs like thyme and rosemary to the packets.

Wrap the cloves in aluminum foil or make a packet out of parchment paper, and place them on a baking sheet. Roast the whole bulbs for 45 minutes until they are very soft and caramelized.

Pro Tip: In the summer, roast the cloves on the grill. Preheat the grill to medium heat. Place the foil-wrapped garlic on the top rack of the grill. Close the lid. “Roast” for 35-40 minutes, depending on how high the grill is.

To Roast Cloves

There are two ways to roast the cloves: individual cloves with the peels on or after they have been peeled.

For unpeeled cloves, place the cloves in a small, oven-safe bowl. Drizzle with oil or add butter to the bowl.

Roast the cloves in a 350°F oven for 20-25 minutes, until soft. Let them cool enough to handle, then peel them.

For Peeled Cloves with no Foil

First, peel the cloves. Cut the tip off of the flat end of the clove, where it attaches to the bulb.

Peel the garlic with the help of a paring knife.

Place the peeled cloves into an oven-safe dish. Barely cover the cloves with olive oil.

Roast the cloves at 350°F for 20-25 minutes until caramelized and soft.

Pro Tip: After roasting the unpeeled cloves in olive oil. Save the oil in a small canning jar and store it in the refrigerator. Use the garlic-flavored oil in your favorite recipes. It is garlicky deliciousness. If refrigerated, it will last at least a week.

How to Roast Garlic in Air Fryer

Roasting garlic in the air fryer takes half the time compared to roasting it in the oven. This is the fastest way to roast them with the least amount of work.

Cut the top off of the garlic as you would for roasting in the oven. Drizzle with olive oil. Wrap the garlic heads in foil.

Air fry the garlic heads at 350°F for 20-25 minutes until tender and caramelized. Let them cool.

How to Stored Extra Roasted Garlic

Roasted cloves can be stored in an airtight container in the fridge for 3-4 days.

Make more roasted garlic than you need for your recipe. Garlic freezes well after roasting. Remove the soft cloves from the peels. Add the peeled cloves to a freezer bag. Flatten the bag out. Freeze them for up to 6-9 months for the best flavor.

To use in recipes, break off a piece of frozen garlic. One tablespoon of roasted garlic equals one clove.

  • Wrap the cloves in aluminum foil and place them on the top rack of a preheated grill at medium heat.
  • Grill with the lid closed for 25-35 minutes, depending on the heat, until soft and caramelized.

For the Air Fryer

  • Preheat the air fryer to 375°F. Cut the tops off of whole heads of garlic to expose the cloves. Drizzle generously with olive oil. Sprinkle with salt and pepper.
  • Wrap the cloves in aluminum foil and place them on the air fryer basket.
  • Air fry for 15-20 minutes until soft and caramelized.

To Roast Cloves of Garlic

  • Place individual unpeeled garlic cloves in a heat-proof dish.
  • Oven roast or grill for 25-30 minutes. Air fry for 15-20 minutes.
  • OR: Peel garlic cloves. Cover the peeled cloves with olive oil. Oven-roast for 20-25 minutes.
  • Reserve the oil to use in recipes. Store it in the refrigerator for about a week.
