This red, white and blue salad has watermelon, blueberry and feta cheese; it is the epitome of easy summer eating. With only five ingredients, it takes five minutes to whip up, and it's great for Memorial Day, Labor Day and the Fourth of July.
Wash the blueberries. Let them drain for a couple of minutes, while you cut the watermelon.
Halve the watermelon. Use a melon baller tool to cut the watermelon into balls. If you don't own a melon baller, cut the watermelon into random-sized chunks or squares.
Add the watermelon and blueberries to a large bowl.
Crumble the feta cheese and add it to the bowl
Chop the mint or tear it between your fingers and add it to the bowl.
If the lime is very hard, microwave it for about 15 seconds to release the juices. After microwaving, roll the lime on the counter with the palm of your hand. You will feel it soften. Cut the lime in half and sprinkle the juice over the salad.
It's best to serve the salad within half an hour so the watermelon don't lose too much juice.
