In my experience, people either love eggnog, or hate it! Somehow, I find myself in the minority. I don’t either love it, or hate it. I could do one glass per year (spiked with a shot of rum, of course). My family hates it! So what do I do with the quart of eggnog that my neighbor gave me? Hide it in this Orange Eggnog Quick Bread, of course!!
I hate wasting food! At the price of food now, it’s seems rather criminal! So, if someone gives me something, you can bet I will come up a way to use it! Even if it is not one of my, or my family’s favorite ingredients. My Mom grew up during the depression, so she was obviously frugal. She would clean out the refrigerator, maybe once per week and whatever was left in the fridge, she would throw in frying pan and either scramble it with eggs on top, or add mushroom soup. We would ask what was for dinner and she would say slumgullion. My brother and I would always groan. Now, until this very moment, I didn’t know slumgullion was an actual word, lol! 🙂
Making Orange Eggnog Quick Bread
As with all quick breads, this Orange Eggnog Quick Bread is.., well…. quick!! Literally, cream the sugar with the wet ingredients. In this case, the eggnog, oil, orange juice. Then add the dry ingredients, flour, baking soda and powder and salt. When that’s done, mix in the nuts by hand. Spray the bread pans with no stick spray. Then fill and bake! Literally 10 minutes prep! The oven does the rest!!

This Orange Eggnog Quick Bread has the most amazing crispy crust and a moist, tender interior! Perfect for you holiday breakfasts!
- 2 cups walnuts
- 5 cups flour
- 2 tsp cinnamon
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 2 cups sugar
- 3 medium oranges
- 1 1/3 cups egg nog
- 1 cup vegetable oil
- 4 large eggs
Preheat oven to 350°F. Prepare bread pans by spraying with non stick spray, or butter and flour.
Measure nuts and pulse in food processor for a few seconds. Transfer to a bowl.
Quarter oranges and remove all of the seeds. Place them in the food processor.
Process for a few more seconds until desired consistency.
Mix the dry ingredients in another bowl, set aside.
In mixer bowl, add the rest of the ingredients and mix until smooth and well blended.
Add flour in 3 parts. Don't over mix. Mix in walnuts by hand
Pour dough into the bread tins. Fill about 2/3 full. Don't over fill!
Bake for 45-50 minutes. Longer, if you use large bread pans.
