This Apple & Dried Cherry Coleslaw is a tangy, sweet twist on the original dish!
As you know, if you been keeping up with my summer, I’m getting tired of BBQ’s! Not to say that I don’t love having people over and hanging on the patio, drinking wine. I’m just tired of all the usual summer side dishes! So this year, instead of making my usual salads, I have been trying to “kick them up a notch”, as Emerill would say!
To that end, I’ve made this BLT Pasta Salad, this Cucumber Tomato Salad, this Broccoli Salad and this Southwestern Garbanzo Salad. I make coleslaw often but this Apple & Dried Cherry Coleslaw had a nice tangy note from the dried cherries and the vinegar!
We have had 5 separate picnics since May and I try to combine occasions. My Father’s birthday is July 2nd and of course, you must have a BBQ for 4th of July. So we combine and just do one, with a birthday cake for Dad and the USA!
I think, or rather I hope, I am done until the end of August. We always have a party for the 5 different birthdays of the Virgos in the immediate family!
Apple Coleslaw is Sweet and Tangy
Anyway, enough about me. Let’s talk about the coleslaw. This Dried Cherry & Apple Coleslaw takes about 15 minutes to make. If you have a decent mandolin, it makes the project even faster! Here is my favorite mandolin! It is tangy and sweet without any added sugar, although occasionally I will add a bit of sugar to mix it up. It’s colorful and delicious!

Apple & Dried Cherry Coleslaw
Ingredients
- 1 head small cabbage, finely shredded red or white or both
- 2 tbsp finely chopped apple of your choice
- 1 can kidney beans, drained and rinsed
- 1/2 cup chopped celery
- 1/2 cup dried cherries
- 1 tbsp celery seed
- 2 tsp cider vinegar
- 1/2 - 1 cup mayonnaise
- salt and pepper to taste
Instructions
- Add all ingredients to a large bowl. Start with 1/2 cup mayonnaise and then add more if you like your coleslaw wetter. Chill.
Notes
Reheat in microwave or, covered, in 350°F oven for about 25 minutes, until hot.
Do not freeze.
