Rosemary and Salmon are made for each other! This Roasted Garlic Rosemary Salmon is literally a marriage made in heaven!
We love salmon around here! Does anyone NOT love salmon? I can’t even imagine! Similarly, I have never met anyone who didn’t love roasted garlic! I bought lots of garlic from a nice Amish lady south of here to replant my garlic patch this fall!
When you plant garlic, you break the cloves off of the head. If you break the outer skin, you can not plant them because they may rot. Hence, I had 30 or 40 large cloves that were broken. Oh what to do with 40 broken cloves of garlic? Why roast them, of course! Once the cloves are roasted, you can freeze them on a cookie sheet. Once frozen place the cloves in a freezer bag and take them out as you need them.
It has been unseasonally warm here this fall, therefore, we had to grill this salmon! We grill the salmon to about 120°F because we prefer it medium rare. But, USDA recommends cooking all fish to 145°F.
This salmon could not be easier to prepare. Just mince the fresh rosemary, paste the garlic and mix it with the rosemary. Then slather the flesh side of the salmon with the garlic/ rosemary paste. You can pan fry, broil, or grill this salmon.

Roasted Garlic Rosemary Salmon
Easy, delicious, gluten and dairy free grilled salmon. The roasted garlic absolutely makes this salmon extra special!!
- 1 lb salmon filet, brought to room temperature
- 4 cloves roasted garlic
- 1 tbsp minced rosemary
- salt and pepper to taste
Paste garlic with side of knife on cutting board. Combine with rosemary.
Slather paste all over the flesh side of the salmon filet.
Place salmon on a hot grill, skin side down for about 3-4 minutes.
Carefully flip salmon onto grill mat or aluminum foil to finish cooking. about 6-8 minutes, depending on the size of the filet. 125°F is medium rare. USDA recommends 145°F for all fish.
