This Leek and Shrimp Pasta comes together in as much time as it takes to cook the pasta! Perfect for any weeknight!
Don’t you just love easy dinners that cam come together in a few minutes? This pasta doesn’t use a ton of ingredients either. Just leeks, garlic, Parmesan cheese and white wine.
The thing that this Leek and Shrimp Pasta is not short on is flavor! Leeks are a member of the onion family. They look like giant scallions or green onions, although leeks have a mild onion flavor all of their own! .
Use the starchy pasta cooking water in this Leek and Shrimp Pasta just before you drain the pasta to make a smooth creamy sauce. Honestly, it couldn’t be easier! Serve with a side salad for a quick and easy meal for any occasion!

Leek and Shrimp Pasta
This Leek and Shrimp Pasta is super easy and delicious.
- 1 lb pasta of your choice, cooked according to package directions
- 1 tbsp olive oil
- 2 cup washed and sliced leeks
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 lb shrimp
- 1/2-1 cup Parmesan cheese
- 2 tbsp. fresh parsley, chopped
- 1 mug pasta water, saved just before draining
- salt and pepper, to taste
Cut leeks in half, lengthwise. Slice white and light green parts leeks crosswise into about 1/2" thick slices. Cover with water and agitate to remove debris. Either use a salad spinner to dry or dry between towels.
Place olive oil in a large saute' pan. Add leeks and saute' until tender. Once the leeks are tender, add garlic and just soften garlic.
Add white wine and cook until pasta is done. Add shrimp to sauce after determining how long they will take to cook. Depending on the size of your shrimp, they will only take 3-9 minutes to cook. Tiny shrimp = 3 minutes, Colossal shrimp= 9-10 minutes. (Shrimp should be bright pink.)
When pasta is just shy of al dente, reserve a large mug of the starchy cooking water. Then drain pasta.
Put the drained pasta into the pot you cooked it in. Add the shrimp/ leek mixture, 1/2 of the mug of pasta water, Parmesan cheese, parsley and salt and pepper. Toss. If the pasta is a little dry, add more of the pasta water until desired consistency.
